We don’t know each other (yet!) but I want to share the tea I’ve spent the last seven years pouring my heart into, because I think you’re going to love them.
In Chinese, we say "ten years a master". A lifetime is barely enough time for the pursuit of perfecting a craft, and with a blink of an eye, I've obsessed over the idea of craft tea for a decade now..
I grew up in Fujian, a lush, southeastern province of China. My childhood memory is marked by ripe mango trees lining the streets, the fragrance of jasmine flowers lingering in my grandma's yard, and bitter sips from my Yeye (grandpa)'s tightly packed Oolong Tea mug
I had a lot of trouble in school, frequently being disciplined and coming home teary eyed. The expectation was to fall in line and obey; and my inquisitiveness was — to say the least — not acceptable practice. At 14, my family finally decided to send me aboard, desperately wanting a chance for me to thrive. So I packed a bag and left for Europe, eventually ending up in Emerson College in Boston.
Missing home, I sought out teas where I could find them — supermarket aisles, Dunkin' Donuts menus. I was baffled by those sugary brown liquids I was tasting — they tasted nothing like tea. I started experimenting with brewing my own, learning from coffee and wine making: blanching, steeping, mixing, blending. My roommates drank them faster than I could make them.
I began gently cold brewing artisanal tea leaves from Asia and Africa.
Steaming the leaves to “wake them up” for the release of flavors and nutrients...
Experimenting with time and temperature inside the cold brew tank...
Naturally intensifying the powerful antioxidants and phytonutrients...
Drawing out different notes such as sweet, fruity, floral, bold, earthy, caramel...
And most importantly, making every single person who tasted my tea say WOW!
No one had thought to cold brew tea before, but it brought out all of the great attributes that were lacking in cheap iced tea.
